This month Sheryl at The Lady Behind the Curtain posed a new Dessert Challenge using apples and cinnamon.

Apples and cinnamon is a classic combination so for this challenge I wanted to totally turn around a recipe.
Now I love rice pudding and cinnamon is a must for me in it. I also love apples and cinnamon in oatmeal. I thought about apple cinnamon cobbler with almonds too. So I wanted somehow to combine all my favorite flavors into one dessert. This rice pudding uses almond milk for a hint of almond flavor, fresh apples and apple butter and I used Saigon Cinnamon for a strong but smooth fragrant cinnamon taste. I hope you find it up to the challenge!

Apple Cinnamon Rice Pudding

Ingredients

  • 2 cups plus 1/2 cup almond milk
  • 2/3 cup basmati rice
  • 1/2 cup apple, diced
  • 2 T sugar
  • 1/2 tsp cinnamon
  • 2 T apple butter

Combine 2 cups almond milk, rice, apples, sugar, cinnamon and apple butter in a 2 quart saucepan. Bring to boil, stirring constantly. Reduce heat and simmer, stirring often until apples are soft and rice is tender and liquid is absorbed (about 20 minutes).
Remove from heat and any additional almond milk to reach desired consistency.
Spoon into serving dishes. Garnish with apple butter or cinnamon if desired. Eat warm or cold.
