When I think, “picnic” I think about already prepared food. A cooler packed with a ton of different goodies bound for a quiet, peaceful spot. Since no one but family or a few friends will be there its okay to eat chicken with your fingers! Especially wings.
Wings don’t need to be covered in gooey sauce to be good. That’s a plus to help keep the ants away and cut down on the Wetnaps!
These Garlic Parmesan Wings are super easy to make without egg or dipped in oil. My secret is sweet rice flour.
I found this out by accident when I tried experimenting with gluten-free breading options. Dipping chicken in flour first is part of a normal dredge. Flour, egg or milk, crumbs. The flour adds gluten that helps keep the breading on the chicken. So to do a good job of keeping wings coated and get a nice, crunchy skin I needed something with a high starch content. That’s where the sweet, also known as sticky rice came into play.
If you are unfamiliar with sweet rice or sweet rice flour, its actually a specific grain that is used in sushi for exactly that binding quality it contains. Safe for gluten-free diets, sweet rice flour is an excellent thickening agent for soups, stews and sauces.

It makes great garlic Parmesan Wings too!

Baked Garlic Parmesan Wings

  • 6 to 8 chicken wings
  • ¼ cup sweet rice flour
  • ¼ cup Parmesan cheese
  • 1 teaspoon granulated garlic or garlic powder
  • ¼ teaspoon smoked paprika
  • salt and pepper to taste
  • cooking spray
  1. Preheat oven to 375 Spray a baking sheet with cooking spray.
  2. Mix together rice flour, cheese and spices.
  3. Roll wings in mixture and place on cooking sheet. Lightly spray the top of the wings.
  4. Bake for approximately one hour (internal temp 165) turning wings over about half-way through cooking process.
  5. Wings will be crisp not bubbly but if you like them browner, broil for about 30 seconds after wings are cooked.

  26. Wings are perfect for a picnic! When I first read this, I thought “I’ve used rice flour for breaded shrimp, but it didn’t help hold stuff on”, and then I saw “SWEET” rice flour. I’m totally looking for it at the store this week. I have something like 50 flours, and somehow don’t have sweet rice flour. It sounds like the perfect solution.
