One of my favorite soups is Cheddar Broccoli. Soup like any dish made with cheese needs the cheese to melt evenly and hold its flavor. The wrong cheese can spoil a good dish.
I used Cabot Alpine Cheddar from their Legacy collection.

From the website: A subtle Swiss and Italian Alpine blend with a slight grana texture similar to Parmesan. At room temperature, this lactose-free cheese will surprise and delight even the most jaded cheese aficionados with its unique flavor.
This cheddar is white in color so it’s easy to blend into any recipe. Leave some of the broccoli crisp tender for texture.

Of course you could spice up the soup with Cabot’s Hot Habernaro!

Cheddar Broccoli Soup

Yield: 6 to 8 servings

Serving Size: 1 cup

Ingredients

  • 1 8-ounce block of Cabot Alpine Cheddar, shredded
  • 4 cups vegetable stock
  • 4 cups fresh broccoli cut into small pieces
  • 1/2 cup chopped onions
  • 1 cup milk
  • 1 tablespoon cornstarch
  • salt and pepper to taste

Instructions

  • Bring vegetable stock, broccoli, onion and to a boil. Simmer for 5 minutes.
  • Add milk and cornstarch return to a boil. Reduce heat and simmer until soup thickens about 1 minute. Remove from heat. Stir in cheese, salt and pepper.
  • Serve.
