Cinnamon Pecan Muffins #FallFlavors

Cinnamon is my go to fall spice. I love the smell of these muffins baking! Warm or cold these muffins make fall feel present and accounted for!

Pecans add a bit of sweet crunch. I prefer Millican Pecan pecans. These nuts hold up their flavor and texture, never dry or overly oily.

Cinnamon Pecan Muffins

Servings 9 muffins

Ingredients
  

  • 1/4 cup butter, unsalted, softened
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1/3 cup milk
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped pecans I use Millican Pecan pecans
  • 1/4 cup pecan halves for decoration

Instructions
 

  • In a medium bowl, cream together butter and sugar, add milk, egg and vanilla.
  • In a separate bowl, mix flour, cinnamon, baking powder and salt. Add half dry ingredients to wet mixture, stir. Repeat with remaining half of wet mixture. Fold in chopped pecans. Add 2 pecan halves on top of each muffin.
  • Fill paper lined muffin tins with 1/4 cup of batter. Bake at 350 degrees for about 15 to 20 minutes or until toothpick comes out clean.
