Honey Thyme Chicken
- 1 lb chicken breast pieces
- 1 cup homemade chicken broth divided
- 2 tablespoons raw honey
- 1 teaspoon dried thyme
- sea salt to taste
- Place ¾ cup broth, honey and thyme in a small saucepan. Simmer over medium heat, whisking constantly until reduced by about ½.
- Brown chicken in ¼ cup broth over high heat for 1 to 2 minutes.
- Pour sauce over chicken and simmer until chicken reaches 160 degrees.
