Chicken Meatballs and Spaghetti

Ingredients
meatballs
  • 1 lb ground chicken
  • ¼ cup minced onion
  • 1 Tablespoon minced garlic
  • 1 Tablespoon Parmesan cheese
  • ½ teaspoon dried celery flakes
  • salt and pepper
  • ¼ to ½ cup breadcrumbs
sauce
  • 1 28-ounce can plum tomatoes
  • ½ cup diced celery
  • ½ cup chopped roasted red peppers
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian seasoning
  • salt and pepper
  • 1 pound dried spaghetti
  • cooking spray
Instructions

  1. Mix together mix together chicken, onion, garlic, celery flakes, cheese, salt, pepper and just enough breadcrumbs to hold it together. Roll into individual balls.
  2. Preheat oven to 350.
  3. Spray cookie sheet with cooking spray. Roll meatballs lightly to coat. Bake for approximately 15 minutes, turning meatballs several times to completely brown and thoroughly cooked.
sauce
  1. While meatballs are cooking, Add all sauce ingredients to a saucepan. Bring to a boil and reduce heat to simmer. Cook until vegetables soften about 15 minutes.
  2. Add meatballs to sauce and simmer for about an additional 15 minutes.
  3. While sauce and meatballs cook, prepare spaghetti according to package directions.
  4. Serve.
