Turkey Croquettes

Ingredients
  • 3 cups leftover stuffing
  • 2 cups shredded cooked turkey
  • ½ cup chicken or turkey broth
  • ½ cup chopped celery
  • ¼ cup chopped onion
  • 1 Tablespoon olive oil
  • 1 teaspoon seasoned salt (optional)
  • ¼ cup flour
  • 2 eggs, beaten
  • 1 tablespoon water
  • ½ cup seasoned breadcrumbs
  • cooking spray
Instructions
  1. Saute celery and onion in oil until soft.
  2. Mix turkey, stuffing, broth and vegetables together. Add seasoned salt if needed.
  3. Scoop ¼ cup patties and dredge in flour, egg wash and crumbs.
  4. Place patties on parchment lined baking sheet. Spray with cooking spray.
  5. Bake at 350 until browned and thoroughly heated, about 20 minutes. Turn once about halfway thorough cooking.
  6. Serve with your favorite gravy.
