Turkey Croquettes

Serves: 12
- 3 cups leftover stuffing
- 2 cups shredded cooked turkey
- ½ cup chicken or turkey broth
- ½ cup chopped celery
- ¼ cup chopped onion
- 1 Tablespoon olive oil
- 1 teaspoon seasoned salt (optional)
- ¼ cup flour
- 2 eggs, beaten
- 1 tablespoon water
- ½ cup seasoned breadcrumbs
- cooking spray
- Saute celery and onion in oil until soft.
- Mix turkey, stuffing, broth and vegetables together. Add seasoned salt if needed.
- Scoop ¼ cup patties and dredge in flour, egg wash and crumbs.
- Place patties on parchment lined baking sheet. Spray with cooking spray.
- Bake at 350 until browned and thoroughly heated, about 20 minutes. Turn once about halfway thorough cooking.
- Serve with your favorite gravy.
