Bow Ties and Tails Galore
- 1 lb raw shrimp, peeled and de-veined
- 1 teaspoon Cajun seasoning
- 1 Tablespoon olive oil
- 2 cups uncooked bow tie pasta
- 1½ cups half and half or 2 percent milk
- 2 Tablespoons corn starch
- 4 ounces shredded cheddar
- ½ cup roasted red peppers
- ¼ cup chopped green onion plus 2 Tablespoons
- salt and pepper to taste
- Cook pasta according to package directions. Drain.
- While pasta cooks, saute shrimp, cajun seasoning and 2 Tablespoon green onion in olive oil.
- In a 2-quart saucepan, bring milk, cornstarch and salt and pepper to a boil over medium heat. Whisk constantly until thickened.
- Remove from heat. Add peppers and cheese.
- Combine shrimp and pasta. Toss with sauce. Garnish with additional green onion.
