Strawberry Pineapple Chicken Salad #TheSaladBar
- 2 cups cooked chicken, diced
- ½ cup strawberries, sliced
- ½ cup fresh pineapple,diced
- ½ cup light mayo
- ¼ cup light or nonfat sour cream
- 1 teaspoon honey
- ½ teaspoon chopped mint
- ½ teaspoon lime juice
- salt and pepper to taste
- lime zest for garnish
- In a medium mixing bowl, combine chicken and well-drained fruit.
- In a separate bowl, mix together, mayo, sour cream, honey, lime juice, mint and salt and pepper.
- Fold dressing over chicken and fruit mixture and serve.
- Garnish with strawberries, mint and pineapple if desired.
- Notes:
- You can use nonfat Greek yogurt instead of mayo and sour cream mixture but I prefer the taste and texture of the mayo and sour cream light version.
- If you start with seasoned chicken, you can probably skip the addition of salt and pepper.
