Ingredients
  • • 2 cups cold mashed potatoes fresh or leftovers
  • • ½ cup flour, divided
  • • 2 Tablespoons olive oil or butter
  • • 2 cups vegetable or chicken broth
  • • 1 cup half and half
  • • 1 cup 2 percent milk
  • • 1 4-oz jar pimentos, chopped
  • • ½ cup onions
  • • 2 Tablespoons cornstarch
  • • 2 cups shredded cheddar cheese
  • • 2 Tablespoons butter
  • • 2 cups cooked smoked turkey sausage, cut into ½-inch cubes
  • • salt and pepper to taste
Instructions
  1. Preheat oven to 200 degrees.
  2. Mix potatoes with ¼ cup flour, salt and pepper to taste. Roll into 1-inch balls. Dip in extra flour. Flatten.
  3. Heat 1 Tablespoon of oil in a large fry pan. Fry potato dumpling over med-high heat until golden brown on all sides. Transfer to a baking sheet and keep warm in the oven while preparing soup.
  4. In a small sauté pan add 1 tablespoon oil, sausage, onion and pimentos. Fry over medium heat until onions are soft and meat is thoroughly heated, keep warm.
  5. Combine half and half, milk and broth in a large saucepan. Whisk in cornstarch, salt and pepper to taste. Slowly bring to a boil. Allow to thicken. Remove from heat and whisk in cheese. Add sausage, onion and pimentos.

  7. Divide into individual bowls and add dumplings. Sprinkle with shredded cheddar if desired.
