Mix potatoes with ¼ cup flour, salt and pepper to taste. Roll into 1-inch balls. Dip in extra flour. Flatten.
Heat 1 Tablespoon of oil in a large fry pan. Fry potato dumpling over med-high heat until golden brown on all sides. Transfer to a baking sheet and keep warm in the oven while preparing soup.
In a small sauté pan add 1 tablespoon oil, sausage, onion and pimentos. Fry over medium heat until onions are soft and meat is thoroughly heated, keep warm.
Combine half and half, milk and broth in a large saucepan. Whisk in cornstarch, salt and pepper to taste. Slowly bring to a boil. Allow to thicken. Remove from heat and whisk in cheese. Add sausage, onion and pimentos.

Divide into individual bowls and add dumplings. Sprinkle with shredded cheddar if desired.
