Turkey Butternut Squash and Orzo Casserole
- 1 medium butternut squash, peeled and cubed (about 3 cups)
- 2 cups apple cider
- 2 cups chicken broth
- ½ cup orzo
- 3 cups fresh or frozen spinach
- 3 cups cooked turkey
- Cook squash in cider and and broth until squash is fork tender. Drain squash, reserving liquid.
- In a large skillet, cook orzo in reserved liquid until pasta is almost done.
- Add spinach to wilt.
- Add squash, turkey and heat thoroughly.
