Turkey Butternut Squash and Orzo Casserole

Ingredients
  • 1 medium butternut squash, peeled and cubed (about 3 cups)
  • 2 cups apple cider
  • 2 cups chicken broth
  • ½ cup orzo
  • 3 cups fresh or frozen spinach
  • 3 cups cooked turkey
Instructions
  1. Cook squash in cider and and broth until squash is fork tender. Drain squash, reserving liquid.
  2. In a large skillet, cook orzo in reserved liquid until pasta is almost done.
  3. Add spinach to wilt.
  4. Add squash, turkey and heat thoroughly.
