Champagne Shrimp and Pasta for #SundaySupper

Ingredients
  • 1 pound raw shrimp, peeled and deveined
  • ¼ pound butter
  • ¼ cup olive oil
  • 1 Tablespoon minced garlic
  • ½ cup champagne
  • 2 Tablespoons champagne vinegar
  • ½ teaspoon thyme
  • ½ cup dried mushrooms, rehydrated
  • ¼ cup grated parmesan cheese
  • 1 (1 pound) box angel hair or thin spaghetti
  • parsley for garnish
Instructions
  1. In a large skillet, combine butter, oil, champagne, vinegar, shrimp, garlic, mushrooms and thyme. Cook over medium heat until shrimp are opaque. stir in parmesan.
  2. While shrimp sauce is cooking, cook pasta according to package directions.
  3. Serve sauce over pasta. Garnish with parsley and additional cheese if desired.
