Ingredients
½ cup chickpea flour
¼ cup flour
2 teaspoons baking powder
1 cup water
1 pound shrimp, finely chopped
¼ cup finely chopped onion
1 teaspoon garlic, minced
2 Tablespoons chopped parsley
1 teaspoon paprika
½ teaspoon salt
olive oil for frying
Instructions
Whisk together flours, paprika, salt and baking powder. Slowly add water to form a thin batter similar to a crepe.
Add shrimp, onions and garlic.
Lightly grease a griddle or fry pan with oil. Heat to medium-high as if frying pancakes.
Drop small spoonfuls onto the griddle. Spread into a thin layer if necessary. Fry 1 to 2 minutes per side until shrimp are cooked and cakes are slightly browned.
Drain on a paper towel if necessary.
