Chicken Chili Cheese Fries #SundaySupper #cookoff
- 1 lb ground chicken
- ½ cup chopped onions
- 1 tablespoon olive oil
- 1 cup black beans
- ½ cup chicken stock
- 1 6-ounce can tomato paste
- 1 14.5 ounce can chopped tomatoes
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 2 teaspoons smoked paprika
- ½ cup shredded cheddar cheese
- 2 large Idaho russet potatoes, peeled and cut into steak fries
- 1 large sweetpotato, peeled and cut into steak fries
- vegetable oil for frying
- salt and pepper
- brown chicken and onions in 1 tablespoon olive oil
- Add tomato paste, stock, tomatoes and spices, simmer to blend flavors
- Fry potatoes and sweetpotatoes in oil until golden brown. Drain on paper towels then keep warm in oven until chili is ready.
- Serve chili over fries and top with shredded cheese.
