Chicken Chili Cheese Fries #SundaySupper #cookoff

Ingredients
  • 1 lb ground chicken
  • ½ cup chopped onions
  • 1 tablespoon olive oil
  • 1 cup black beans
  • ½ cup chicken stock
  • 1 6-ounce can tomato paste
  • 1 14.5 ounce can chopped tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons smoked paprika
  • ½ cup shredded cheddar cheese
  • 2 large Idaho russet potatoes, peeled and cut into steak fries
  • 1 large sweetpotato, peeled and cut into steak fries
  • vegetable oil for frying
  • salt and pepper
Instructions
  1. brown chicken and onions in 1 tablespoon olive oil
  2. Add tomato paste, stock, tomatoes and spices, simmer to blend flavors
  3. Fry potatoes and sweetpotatoes in oil until golden brown. Drain on paper towels then keep warm in oven until chili is ready.
  4. Serve chili over fries and top with shredded cheese.
