Grilled Turkey Rachel #WeekdaySupper
- 4 slices rye, marble or pumpernickel bread
- 4 slices low-fat Swiss cheese
- ¼ pound deli turkey meat
- ½ cup cole slaw
- ¼ cup Thousand Island dressing
- butter for grilling
- Spread dressing on both sides of bread. Top with one slice cheese per piece.
- Melt butter in skillet. Add bread.
- Add turkey along side of bread, turning to warm through.
- When cheese starts to melt, add warmed turkey to both sides of sandwich. Top with cole slaw.
- Remove when bread is lightly browned and cheese is melted.
