Pinot Noir Glazed Salmon

Ingredients
  • 1 lb salmon filet
  • cooking spray
  • seafood seasoning
  • 1 cup Gallo Family Vineyards Pinot Noir
  • ¼ cup fresh or frozen raspberries
  • ¼ cup plus 2 tablespoons dark brown sugar
  • 1 teaspoon balsamic vinegar
  • ¼ teaspoon cinnamon
  • pinch of salt
  • raspberries for garnish
Instructions
  1. Spray a cast iron skillet, oven safe skillet or casserole dish with cooking spray.
  2. Place salmon skin side down in pan. Sprinkle with seafood seasoning. Bake at 350 for about 20 minutes and internal temperature reaches 145 degrees.
  3. Place wine, raspberries, ¼ cup brown sugar, vinegar, cinnamon and salt in a saucpan. Bring to a boil whisking constantly.
  4. Remove from heat and strain.
  5. Return glaze ingredients to stove add extra sugar if preferred and simmer until reduces to a glaze consistency.
  6. Drizzle over salmon and garnish with raspberries.
