Tuna and Potato Salad
- ½ can tuna 2.5 oz
- 2 medium potatoes cooked and cut into 1-inch pieces
- 1 hard boiled egg cut into ½-inch pieces
- ¼ cup fresh peas
- 1 teaspoon dried celery flakes
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Lemon pepper
- Lemon zest
- Whisk together oil, vinegar, lemon pepper,lemon zest, set aside.
- Mix together potatoes, egg, tuna, peas and celery flakes.
- Coat with dressing and serve alone or over a bed of greens.
