I can eat peanut butter as a spread, baked in recipes like Peanut Butter Donuts with Chocolate Icing or Chocolate Marshmallow Peanut Butter Stuffed Donuts and then I make Peanut Butter Brownies and can’t forget the Peanut Rolled Egg Candy and of course homemade honey peanut butter.
For today’s event I decided to make my Mom’s homemade Peanut Butter Potato Candy. This recipe was my Gram’s and my Mom made it every Christmas as part of her homemade candy line up.
Cooked potatoes add the starch and moisture to hold the candy dough together. Russets are a good choice for this recipe.
I peel and cook the potatoes on top of the stove. Drain well.
I also like to work on a silicone mat when it comes to sticky dough. Remember to have some extra powdered sugar on hand to dust the pin and mat or waxed paper that you roll out the dough on.
Form a rectangle about 1/4 to 1/2 inch thick.

Spread with creamy or crunchy peanut butter. I use homemade or a good quality all natural brand.

Roll up the candy into a log. I like to wrap the log in waxed paper. Refrigerated for at least 2 hours or overnight before slicing.

You can also roll pieces of the dough into balls and roll it in a mixture of powdered sugar and cocoa. Two parts sugar to one part cocoa.
The following recipe is more of a guideline that a recipe. Either way I know that you will find this candy delicious.

Ingredients
  • 2 medium potatoes, peeled cooked and drained
  • 1 2 lb bag of powdered sugar plus extra for rolling out dough
  • 1 cup peanut butter
  • milk as needed
Instructions
  1. Mash potatoes or use a ricer.
  2. Add sugar slowly to form a stiff dough.
  3. Add milk a little at a time if too dry.
Notes
The moisture from the potatoes can vary greatly.
