Pumpkin Kugel brings fall flavors of creamy pumpkin and crunchy pepitas to a simple noodle pudding recipe.
Years ago I worked in a Deli. It started out as a Jewish deli with all the trimmings. We carried sable, lox and pickled herring, knishes, tongue and of course, kugel.
Few items passed my twenty-something taste buds with flying colors. One of those was my boss’s sweet kugel.
Kugel, also known as noodle pudding can be made sweet or savory. We offered several versions in house. Raisins and cinnamon was my favorite.
Kugel can also be made with matzo or bread. I’ve only tasted it with noodles so I’m a bit partial.

Today’s Sunday Supper is all about my orange friend, pumpkin.

Before we know it, September is going to be over… and into October we’ll go, straight to the pumpkin patch! Stores are already stocking up for Fall, whether it’s your local supermarket with pumpkin-themed baked goods and shelves of early Halloween decorations or your neighborhood coffee shop brewing up pumpkin spice coffee.

Naturally, we want to keep up and get involved in the pumpkin-themed fun! For this Sunday Supper, dish out your best simple pumpkin recipes. We want simple pumpkin recipes from breakfast to dessert and everything in-between, snacks and drinks included. Keep it simple and have fun!

Pumpkin Kugel seemed like a natural recipe for this week’s event. Creamy pumpkin helps coat these tender noodles. I added pepitas or roasted pumpkin seeds to give it a bit of crunch! I can’t believe how good this recipe turned out. Don’t take my word for it.

Pumpkin Kugel

Yield: 9 servings

Serving Size: 1 piece

Ingredients

  • 8 ounces wide noodles, cooked
  • 1/4 cup butter, melted and cooled
  • 4 ounces sour cream
  • 4 ounces cottage cheese
  • 2 eggs, beaten
  • 1/3 cup plus 2 tablespoons sugar
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 cup pumpkin puree
  • 1/2 cup pepitas
  • spray oil to grease baking dish

Instructions

  • Place cooked noodles in a large bowl.
  • Combine butter, sugar, sour cream, cottage cheese, vanilla and spices. Add eggs and pumpkin. Stir .
  • Pour over noodles and turn to coat.
  • Place mixture in a greased 8x8-inch baking dish. Sprinkle with pepitas.
  • Bake at 350 for approximately 45 minutes until custard is set and noodles start to brown.
