Shrimp and Scallops Medley

A great alternative to meat or jarred pasta sauce!



8 ounces pasta, angel hair
1/2 lb shrimp raw, peeled and deveined
1/2 lb scallops
2 cups tomato, canned diced with juice
3 cups spinach leaves
1 cup broccoli florets
1/2 cup bell pepper, roughly chopped
2 Tbsp white wine
1 Tbsp Italian seasoning
1/4 cup Parmesan cheese (optional)

1. Cook pasta according to package directions.

2. Place tomatoes, broccoli, spinach, peppers and seasoning in a 3-quart saucepan. Bring to a boil over medium heat. Reduce heat and simmer for 2 minutes.

3. Add shrimp and simmer an additional 2 minutes.

4. Add wine and scallops, simmer an additional 2 minutes or until shrimp and scallops are opaque.

5. Serve over pasta. Sprinkle with Parmesan cheese if desired.
