Turkey Butternut Orzo Casserole
Okay, I know that not everyone has turkey leftover today, but for those who do….

how about a quick, easy turkey casserole? It is still squash season and fresh spinach is also abundant this time of year. Add a little sweetness from apple cider (or apple juice if you prefer) and you have a delicious casserole!

Turkey Butternut Squash Orzo Casserole

Ingredients

  • 1 medium butternut squash, peeled and cubed (about 3 cups)
  • 2 cups apple cider
  • 2 cups chicken broth
  • 1/2 cup orzo
  • 3 cups fresh or frozen spinach
  • 3 cups cooked turkey

Cook squash in cider and and broth until squash is fork tender. Drain squash, reserving liquid.

In a large skillet, cook orzo in reserved liquid until pasta is almost done.
Add spinach to wilt.
Add squash, turkey and heat thoroughly.
