Do you think you have what it takes to stuff my boat with deliciousness? I went to the Food and Wine Conference in Orlando this weekend and came home to this Nice zucchini pile.
Recently I asked my fellow food bloggers what to do with an overabundance of green squash. Suggestions ran from zucchini pizza, tacos, bread, bakes and casseroles to hiding it in people’s cars. I admit I did think about the car thing. It also prompted me to lock my doors so no one “gifts” me with their extra cute courgettes.
I tried to give some to my granddaughter but she said that they are eating zucchini boats every night for the past six nights. Zucchini boats. Scooped out overgrown zucchini stuffed with…hmmm. What should I stuff these with tonight? Any ideas?
