Pea and Green Bean Rice Medley #RecipeReDux #ad

Serves: 4 servings
Ingredients
  • 2 cups cooked white or brown rice
  • ½ cup Libby's peas
  • ½ cup Libby's green beans
  • ¼ cup uncooked, broken angel hair pasta
  • 2 Tablespoons olive oil
  • 1 Tablespoon lemon juice
  • ½ teaspoon dried thyme
  • Salt and Pepper to taste
  • Chopped parsley for garnish, optional
Instructions
  1. Heat oil and pasta on high for 1 minute until browned.
  2. Remove from heat and add rice, thyme and lemon juice. Return to stove heat thoroughly over low-medium heat for 3 to 5 minutes. Stir frequently.
  3. While rice heats prepare peas and beans according to package directions.
  4. Drain ½ cup peas and ½ cup beans. Stir into rice. Salt and pepper to taste. Serve garnished with parsley if desired.
Notes
Serve remaining vegetables on the side.
