Corn Pie Bites

Serves: 12 to 15 phyllo cups.
Ingredients
  • ½ cup Libby's Corn (Vegetable Pouches) drained
  • 1 hard boiled egg, chopped
  • 2 teaspoons milk
  • salt and pepper to taste
  • 1 package pre-baked phyllo cups
  • 4 saltines, crumbled
  • smoked paprika for garnish
Instructions
  1. Heat corn and add to chopped egg.
  2. Mix in milk one teaspoon at a time, just enough to moisten. salt and pepper to taste.
  3. Fill phyllo cups.
  4. Sprinkle with saltines.
  5. Broil on low for 15 to 20 seconds to brown crumbs and thoroughly heat.
  6. Garnish with paprika. Serve.
