Corn Pie Bites
Serves: 12 to 15 phyllo cups.
- ½ cup Libby's Corn (Vegetable Pouches) drained
- 1 hard boiled egg, chopped
- 2 teaspoons milk
- salt and pepper to taste
- 1 package pre-baked phyllo cups
- 4 saltines, crumbled
- smoked paprika for garnish
- Heat corn and add to chopped egg.
- Mix in milk one teaspoon at a time, just enough to moisten. salt and pepper to taste.
- Fill phyllo cups.
- Sprinkle with saltines.
- Broil on low for 15 to 20 seconds to brown crumbs and thoroughly heat.
- Garnish with paprika. Serve.
