It’s a crime how good these Bewitching Brownie Bars taste! Chocolate, cinnamon and gooey butterscotch swirled on top. Sprinkles. Don’t forget the sprinkles!

Every month our #FillTheCookieJar cookie loving group meets to share our best cookies and bars to fit the theme. This month we will be sharing cookies that remind us of Halloween fun and shenanigans!

Bewitching Brownie Bars start out as ordinary chocolate brownies. Then add some cinnamon for fall of course. I piped a swirl of melted butterscotch morsels on top. Pull a knife from the center to the edge to create a web effect.

Add some sprinkles for color. I bought some from the bakery department where I shop.
So festive right?

Serve Bewitching Brownie Bars at your next Halloween party. Adult enough to serve with a dark beer or mixed drink. Equally good with warm apple cider or hot cocoa. Guaranteed that your guests will have a howling good time!

 

Bewitching Brownie Bars

Yield: 9 to 12 bars

Ingredients

  • 2 squares unsweetened chocolate
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs, beaten
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup butterscotch morsels melted
  • 1 teaspoon shortening
  • sprinkles for decorating

Instructions

  • Melt chocolate and butter together in a double boiler. Set aside to cool.
  • Whisk together flour, baking powder, salt and cinnamon.
  • Stir sugar into cooled chocolate and butter pot. Temper eggs into chocolate mixture.
  • Add wet to dry ingredients.
  • Pour batter into well buttered 8x8-inch pan.
  • Melt butterscotch and shortening together in the microwave until creamy. Cool slightly and place in baggie.
  • Cut small tip off baggie. Swirl butterscotch on top of batter. Drag knife from center to create web effect.
  • Add sprinkles. Bake at 350 approximately 30 minutes until inserted toothpick comes out clean.
  • Cool on rack before cutting into bars.

I used some leftover pork roast, mashed sweet potatoes, spinach and arugula to create these Pork and Sweet Potato Wraps with great fall flavors. Add a light side salad with a squirt of lemon and that’s all I need.

Pardon me. I couldn’t wait to start eating!

Ingredients

  • One Mission Carb Balance Whole Wheat tortilla
  • 1/2 cup cooked pork pieces
  • 1/2 cup mashed sweet potatoes
  • 1 cup spinach and arugula mix
  • 1 Teaspoon brown sugar
  • 1/4 teaspoon cinnamon

Instructions

  • Heat tortilla in medium hot skillet for 10 seconds per side.
  • Spread with mashed sweet potatoes. Sprinkle with brown sugar and cinnamon.
  • Add pork, spinach and arugula.
  • Roll up tortilla. Serve cold or microwave in 10 second intervals to thoroughly heat.
  • Serve with a light salad if desired.

Applesauce Cake with Peanut Butter Swirls

Autumn is officially here. Shorter days and cooler nights. All the leaves showing their true colors. Vivid reds, oranges and yellows peeking through the trees. Time for pumpkins, hayrides, corn mazes and apple picking. Time to break out my flannel shirts, and pack away the shorts.
Oh, and the food!
Crockpot beef stew filling the kitchen with mouth-watering promises. Apple crisp and warm cider. Roasted Butternut and Acorn squash appears in soups or stuffed and pumpkin everything.

This week Sunday Supper welcomes fall and celebrates autumn flavors!

I couldn’t decide which symbol of fall foods to choose. So I did what I usually do when faced with a similar situation. Try to use a few together in one dish!

That explains the extra long title this week.

Applesauce Cake with Peanut Butter Cream Cheese Swirls!

I love applesauce in just about anything. By itself, baked in cake or added to pork chops with a bit of cinnamon of course!

Peanut butter reminds me of fall. That’s the time to harvest the roasting ones. When the leaves turn yellow. As far as cream cheese goes, do you really need to pair it with a season? I feel cream cheese is a 4 season treat.

I’m ready to sit down with a piece of this cake, some warm apple cider and a good book. There is plenty here. Will you join me? What can I get you to drink?

Applesauce Cake with Peanut Butter Cream Cheese Swirls #SundaySupper

Ingredients

    cake
  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup applesauce
  • cream cheese swirl
  • 6 ounces cream cheese, softened
  • 1/3 cup peanut butter
  • 1 egg
  • 1/4 cup sugar

Instructions

  • Cream together cream cheese, peanut butter, egg and 1/4 cup sugar. Set aside.
  • Cake
  • Cream together butter, sugar. Add egg and applesauce.
  • In a separate bowl whisk together flour, baking soda, cinnamon. Fold into wet ingredients.
  • Pour batter into an 8 x 8-inch greased and floured pan.
  • Drop peanut butter cream cheese by spoonfuls on top of batter. Run a knife through the batter to swirl in the cream cheese.
  • Bake at 350 for approximately 35 to 40 minutes until inserted toothpick comes out clean.
