Shrimp and Crab Cakes #WeekdaySupper

Shrimp and Crab Cakes

Sunday Supper Movement

Weekday Suppers play beat the clock when it comes to prep and cooking time. Any recipe we love that I can prep way ahead of time and finish-off in a few minutes get a thumbs up from me.
Crab cakes are one of those make ahead entrees that cook up in about 10 minutes.
These easy to prepare crab cakes get switched up with the addition of cooked shrimp. I learned in school that grinding a little cooked shrimp in a food processor makes a paste that helps hold seafood dishes together. The protein strands work their magic. I saw on a recent TV show that if you use ground shrimp in your cakes, you don’t need an egg. I encourage you to try it both ways, with and without an egg and let me know which one you like!

Shrimp and Crab Cakes

Ingredients

  • 1 cup chopped cooked shrimp
  • 8 ounces crabmeat: claw, special or backfin
  • 1 Tablespoon mayo
  • 1 teaspoon brown mustard
  • 1/2 teaspoon seafood seasoning
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Worcestershire
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 Tablespoons olive oil

Place olive oil in a medium skillet.
Grind 1/4 cup of the shrimp in a food processor to form a thick puree.
Mix together shrimp, crab, mayo, mustard, lemon juice, Worcestershire, egg and 1/2 the bread crumbs (about 1/4 cup). Place remaining 1/4 cup crumbs on a plate.
Form into 4 patties and coat with bread crumbs. Cover and refrigerate from 30 minutes up to 48 hours.
Cook cakes over medium heat, browning both sides and thoroughly heated.

I served these with a little tartar sauce. Cocktail sauce works just as well. I like to take advantage of seasonal veggies. Notice the sweet potato fries are drenched in cinnamon. So good!

More Cookies Please! #SweetStackers To the Rescue!

I received a Sweet Stackers food storage system to review. I received no additional compensation. Opinions are my own.
Sweet Stackers
The holidays are coming and it will soon be cookie baking season again! If you are like me, then you bake cookies for your family, some more cookies and sweets for gifts, maybe some wind up at work…you get the idea.
Delicate cookies and baked items can be hard to store. I usually wind up either having trays in single layers or just stacking cookies on top of each other at weird angles. That’s fine for family nibbles but for storing or transporting cookies as gifts, give these reasonably priced plastic layers a try!

sweet stackers layers
Sweet Stackers are a stackable food storage system that allows you to layer your food or bakery items on trays, which fit in a plastic food container that you probably already own!
These trays come with adjustable plastic risers that let you comfortably space baked goods. The trays rest on top of the risers so nothing touches it. Very nice!
Sweet Stackers are made out of polypropylene which is BPA free. Polypropylene is commonly used in food packaging and containers. You can use it in the refrigerator or freezer too. The trays and riser pieces are hand washable and can also be put in the upper rack of your dishwasher.

Sweet Stackers fit a variety of plastic food storage containers, but most importantly they fit the major brands like Rubbermaid®, Tupperware® and Sterilite®.
This system works great for other foods like deviled eggs, canapes and mini muffins.
To learn more about this storage system or to purchase one of your own, click here.
I am also lucky enough to have Sweet Stackers as one of my sponsors for #FallTasteParty2013!

Pizza Bones #SundaySupper

♪ ♫ Them bones,them bones…♫ ♪ them tasty bones!
pizza bones and sauce

This week the Sunday Supper Group is scaring up some Halloween menu ideas for your party from cocktails to sweet treats and everything in between. I’m a big fan of Halloween. I love seeing the costumes and dressing up myself on occasion! Trick or treat usually meant coming home with tons of candy to sort through before letting my daughter eat a thing. What torture! I used to keep a treat or two in my pocket to let her have between houses to appease her. 😉

I made Pizza Bones for our virtual Halloween Party! These are very simple to make and cook in about 15 to 20 minutes. Thank you, Kathia from
Basic N Delicious for hosting our party!

Pizza Bones

Ingredients

  • 1 package pizza dough or homemade dough
  • 1 package mozzarella string cheese sticks, I used the “light” ones
  • 1/2 lb luncheon meat, I used turkey pastrami and pepperoni
  • 1 jar of your favorite pizza sauce

Roll pizza dough into a large rectangle and cut into 4 strips. Cut cheese sticks in half and space them a few inches apart on the dough strip.

Wrap the cheese with your choice of meat if desired. Cut between the bones leaving enough room to pinch dough shut around filling.

pizza bones pastrami

Bake at 450 degrees for 15 to 20 minutes until dough is done and cheese is melted.
