Hot Apple Pizza for #SundaySupper

apple pizza
Fall is just around the corner and my thoughts turn to all the delicious flavors of the season. Pumpkins and apples jump to mind; pears also and squash of course! So for today’s Sunday Supper we are celebrating Fall Foods!
Apples are my weakness when it comes to fruit. Raw, cooked, sauced, baked, you name it. Its all good eating. I chose a form of pizza adapted from one of my favorite cookbooks, The Complete Vegetarian Cookbook.
This pizza has cinnamon and apple juice concentrate in the crust. I added smoked gouda between the apple layers. So good! Some pecans for crunch and craisins, well they’re craisins, people!

This pizza is just as good served cold!

Strawberry Frozen Yogurt Sundaes #RecipeReDux reveal

 Strawberry Frozen Yogurt Sundaes

September is still pretty hot here in PA, so this month’s Recipe ReDux challenge sounds good to me!

No Cooking Required Desserts!

recipe redux

Recipe ReDux members strive to create a healthful recipe based on the secret ingredient or technique chosen for the monthly challenge.
My first instinct was a no-bake cookie, something with cereal and peanut butter. I couldn’t make up my mind which cereal to use so I decided on making frozen yogurt sundaes. You can use already flavored strawberry yogurt, I prefer to make my own with Greek yogurt, strawberries and honey. Either way is fine. Oh, and I used ground almonds as a coating for these yogurt balls.

Ingredients
2 cups Greek Yogurt
2 cups fresh strawberries
1/2 cup ground almonds
1/4 cup honey

Method
Place strawberries and honey in a food processor. Pulse until roughly chopped.
Mix yogurt with 1/2 the strawberries and pour into a pan. Save the other half for your topping.
Process the mixture in your ice cream maker then freeze to harden more. While it hardens, grind your almonds.
When yogurt is set, stir and scoop into little balls. Roll in ground almonds and freeze until hard.
Arrange balls in a dessert cup. pour remaining strawberry “syrup” over balls. Top with a dollop of yogurt.

Cinnamony Sweet Potato Muffins #WeekdaySupper for #FamilyDinnerTable

cinnamony sweet potato muffins

Weekday Suppers can be a scramble to get a meal prepped, cooked and on the table at a reasonable hour. During Sunday chat I found out a few of our group grew up with a set dinnertime of 5:00 pm. I didn’t have a set time to eat dinner. We ate when dinner when it was ready.
When my girl was little, we ate as soon as we could. I worked late hours so dinners were prepped ahead of time: chicken breaded, veggies cut, salads made. I still make salad plates on a regular basis before I go to work. A simple act of cutting prep time or having a chef salad ready to eat relieves so much stress about meals.

Sunday Supper Movement

Reading through the recipes, one caught my eye,Cinnamony Sweet Potato Muffins.

I love Grace VanDeWeghe’s description.

“Belgian families like mine love breakfast food, and these cinnamon-spiced muffins always remind me of cozy mornings growing up at home. These muffins could cure anything – a bad day at school, a scrape at the playground, a lost soccer game. Just smelling the irresistible aroma wafting from the kitchen always made me feel as though everything would be all right – and you know what? It was.”

Thanks to her description and the fact that I love sweet potatoes, my decision wasn’t difficult at all!

We didn’t eat them all at once. Come on I have some restraint! I froze a few and made breakfast with a few too! A little sausage fried into a patty, some egg and cheese and a little syrup! So delicious!
