Candied Flowers for #SundaySupper

This week the Sunday Supper Group has green on our minds. Spring, green foods and of course St. Patty’s Day. This event is hosted by Amber of Mama’s Blissful Bites . Thanks Amber!
It’s a spring thing. Longer days. Warmer nights. Bits of green poking out here and there. Crocus, daffodils, tulips… well I can dream can’t I? Seriously, I know warm weather is on the way. When it does get here there are little jewels that poke through the grass. Violets!


Candied edible flowers add a lovely touch as garnish to baked goods, salads and appetizers. Violets, Johnny-jump-ups, and Pansies are in season now. Violets have a delicate, pepper taste alone. Candied they sparkle and add a sweet, crunchy texture to your dish.

Candied Violets

If you are serving edible flowers, there are a few rules to follow:
1. Make sure the species is safe for human consumption. Check with your local county agricultural extension office for a complete list.
2. Know your source. Flowers need to be free of pestcides, and/or herbicides.
3. Control the amount per serving. Introducing new foods can cause gastric distress for some people.
Candied Violets
Fresh violets rinsed and pat dry
1 egg white
castor (super fine sugar)

Gently coat all exposed area of the flower with egg white. Sprinkle with sugar. Repeat adding egg and sugar until completely covered.


Place finished sugared flowers between wax paper and store in a cool dry place for one to two days or until hardened.
Use your candied flowers on baked goods, in salads, or as garnish.

Mini Stuffed Bagel Bites for #WeekdaySupper

Sunday Supper Movement

I picked the Friday edition of #WeekdaySupper for a very good reason. Fridays at #WeekdaySupper are reserved for Fun Food! You know, laid back anything goes, how about pizza, appetizer night or brinner?

Bagels actually fit the bill for pizza night as a pizza. A bagel with a smear of veggie cream cheese is a good appetizer and an omelet sandwich on a bagel, well, I’m there.
Don’t forget that sandwiches with soup and/or salad also count as dinner. So why not have a stuffed one with a few of your favorite things?
Quick. Easy. Fun. Dinner everyone!

    Ingredients

  • 8 mimi bagels, plain or whole wheat
  • 1/4 cup turkey ham finely chopped
  • 1/4 cup red pepper, finely chopped
  • 1/4 cup green pepper, finely chopped
  • 1/4 cup carrots, shreddded or finely chopped
  • 1/4 cup tomatoes, finely chopped
  • 1/2 cup shredded cheese

Method
Scoop out enough bread to create a cavity for filling.

Preheat broiler. Fill bagels with any combination you or your family likes. Everybody can create their own. You can also use leftover chicken, a variety of cheeses, tuna or whatever works at your house!

Broil mini bagels open faced until warm, heated through and cheese is melted.

place top and bottoms together, mix or match as you like!

Slice and arrange on a plate. Serve alone or with salad or soup.
