I confess. I love fried potatoes. I love fried cabbage. Fried foods are more of a treat for me than an everyday meal. So when I received my bottle of Pompeian Extra Virgin Olive Oil, I was like a kid in a candy store!

I use a lot of olive oil in this household. A tablespoon here and a tablespoon there adds just enough heart healthy fat to our diet. To put Pompeian oil to the test, I made a dish that uses much more oil than what I usually use to pan fry. Like I said, it was a treat for me! 🙂

Potato, Cabbage and Smoked Sausage Skillet

Ingredients

  • 2 large or 3 medium potatoes, peeled and sliced ( about a 1/4-inch thickness)
  • 3 cups shredded cabbage
  • 1 medium onion, sliced
  • 1 pound fully-cooked smoked sausage (beef, pork or turkey) sliced
  • 6 Tablespoons olive oil
  • 3 Tablespoons butter
  • Salt and Pepper to taste

Directions

In a large skillet, add olive oil, potatoes and onions. Salt and pepper to taste. Fry over med-high heat for 2-3 minutes then flip.
Add cabbage and butter.Reduce heat to medium and cover, and simmer 5 to 10 minutes, stirring occasionally to loosen potatoes and distribute heat.

Add sausage and continue to cook until cabbage is soft, potatoes are crisp on the outside and sausage is heated through.

Hot Apple Pizza for #SundaySupper

Fall is just around the corner and my thoughts turn to all the delicious flavors of the season. Pumpkins and apples jump to mind; pears also and squash of course! So for today’s Sunday Supper we are celebrating Fall Foods!
Apples are my weakness when it comes to fruit. Raw, cooked, sauced, baked, you name it. Its all good eating. I chose a form of pizza adapted from one of my favorite cookbooks, The Complete Vegetarian Cookbook.
This pizza has cinnamon and apple juice concentrate in the crust. I added smoked gouda between the apple layers. So good! Some pecans for crunch and craisins, well they’re craisins, people!

Hot Apple Pizza

This pizza is just as good served cold!

Ingredients
Dough

  • 1 Tablespoon dry active yeast
  • 1/4 cup warm, water (100-110 degrees)
  • 1 cup flour
  • 1/2 teaspoon cinnamon
  • 1 Tablespoon butter
  • 1 Tablespoon apple juice concentrate

Topping

  • 2 apples, sliced thin
  • 1/4 cup pecans
  • 1/4 cup craisins
  • 2 Tablespoons, apple juice concentrate
  • 1 Tablespoon butter
  • 2 ounces smoked gouda, sliced

Directions
Mix the yeast, warm water and a teaspoon of flour together. Set in a warm place and allow to bloom (10-15 minutes).
Mix together flour and cinnamon. Crumble in butter.
Add yeast mixture and apple concentrate.
Knead into a stiff dough. Add a little warm water if too dry.
roll into a circle about 8 to 9 inches wide. cover and allow to rise for about 15 minutes.
Place dough on a lightly sprayed pizza sheet or baking sheet.
Arrange apple and cheese slices to cover dough.
Sprinkle with craisins and nuts. Dot with butter and drizzle with concentrate.
Bake at 400 degrees on the middle rack until the apples are soft, dough is done and cheese melted for 15 to 20 minutes.

Strawberry Frozen Yogurt Sundaes #RecipeReDux reveal

September is still pretty hot here in PA, so this month’s Recipe ReDux challenge sounds good to me!

Recipe ReDux members strive to create a healthful recipe based on the secret ingredient or technique chosen for the monthly challenge.
My first instinct was a no-bake cookie, something with cereal and peanut butter. I couldn’t make up my mind which cereal to use so I decided on making frozen yogurt sundaes. You can use already flavored strawberry yogurt, I prefer to make my own with Greek yogurt, strawberries and honey. Either way is fine. Oh, and I used ground almonds as a coating for these yogurt balls.

Ingredients
2 cups Greek Yogurt
2 cups fresh strawberries
1/2 cup ground almonds
1/4 cup honey

Method
Place strawberries and honey in a food processor. Pulse until roughly chopped.
Mix yogurt with 1/2 the strawberries and pour into a pan. Save the other half for your topping.
Process the mixture in your ice cream maker then freeze to harden more. While it hardens, grind your almonds.
When yogurt is set, stir and scoop into little balls. Roll in ground almonds and freeze until hard.
Arrange balls in a dessert cup. pour remaining strawberry “syrup” over balls. Top with a dollop of yogurt.
