Strawberry Pineapple Chicken Salad #TheSaladBar

I can eat salads anytime of year. So I was especially excited to learn about this great new group of salad lovers over at The Salad Bar on Facebook. Each month we’ll have a theme to build our salad around.

June is BERRIES!

Luscious, juicy, sweet strawberries, raspberries, blackberries, blueberries, mulberries all kinds of berries to choose a salad combo to go with them was easy. Berries pair well with poultry. I love blueberries with chicken and cranberries and turkey are classic. I know, cranberries are a little out of season so I chose strawberries.

I’ve never paired strawberry and chicken before but I have made chicken with pineapple and strawberries and pineapple so why not all three?

Bingo! Add a little lime and you are in for a refreshing salad to perk up lunch or even dinner. Its a great way to use leftover chicken too.

Ingredients

  • 2 cups cooked chicken, diced
  • 1/2 cup strawberries, sliced
  • 1/2 cup fresh pineapple,diced
  • 1/2 cup light mayo
  • 1/4 cup light or nonfat sour cream
  • 1 teaspoon honey
  • 1/2 teaspoon chopped mint
  • 1/2 teaspoon lime juice
  • salt and pepper to taste
  • lime zest for garnish

Directions

In a medium mixing bowl, combine chicken and well-drained fruit.

In a separate bowl, mix together, mayo, sour cream, honey, lime juice, mint and salt and pepper.

Fold dressing over chicken and fruit mixture and serve.

Garnish with strawberries, mint and pineapple if desired.

Notes:

You can use nonfat Greek yogurt instead of mayo and sour cream mixture but I prefer the taste and texture of the mayo and sour cream light version.

If you start with seasoned chicken, you can probably skip the addition of salt and pepper.
