Smores Latte delivers rich coffee and chocolate milk in a warm drink topped with toasted marshmallows and graham crumbs. Part of our Winter Warm-Up Drinks Series from Festive Foodies.

I toasted the marshmallows on a cookie sheet under the broiler.  Easy and you can toast them as dark as you like. Allow the marshmallow to cool slightly before placing on top of the latte. 😉

Drizzle with chocolate sauce and sprinkle on graham crumbs.

Ingredients

  • 6 ounces milk
  • 2 ounces coffee
  • 1 ounce chocolate syrup plus syrup for drizzle
  • 1/4 cup mini marshmallows
  • 1 tablespoon graham cracker crumbs

Instructions

  • Toast the marshmallows on a cookie sheet under the broiler. Allow the marshmallow to cool slightly before placing on top of the latte.
  • Combine milk, coffee and chocolate in a small saucepan. Heat over low heat to 160 degrees. Pour into mug, Top with toasted marshmallows. Drizzle with chocolate sauce and sprinkle on graham crumbs.

For this month’s bake, I went with an old favorite.

Sometimes we like a bit of meat in ours. I’ve used bacon, hamburger and even salmon. Today we were hungry for Turkey Ham Mac and Cheese.

Turkey Ham Mac and Cheese

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 6 to 8 servings

Serving Size: 1 cup

Ingredients

  • 2 cups chopped turkey ham
  • 2 cups dry pasta
  • Cheese sauce
  • 1 1/2 cups milk
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • 1 teaspoon dry mustard
  • 4 ounces cheddar, shredded
  • salt and pepper to taste

Instructions

  • Cook macaroni according to package directions. Drain.
  • cheese sauce
  • Whisk together milk, cornstarch, butter, mustard, salt and pepper in a medium saucepan. Bring to a boil over medium-low heat. Boil about 1 minute, reduce heat and simmer, stirring constantly until thickened.
  • Remove from heat and whisk in cheese.
  • Add macaroni and turkey ham.
  • Bake at 350 for approximately 30 minutes until thoroughly heated and cheese is melted.
  • Garnish with chopped parsley if desired.

It’s the start of the new year! Let’s all start the year off right with some delicious healthy recipes.
Beef Black Rice Casserole serves lean, healthy beef protein with nutritious black rice, carrots, peppers, onions and celery.

If you never had black rice, you are in for a treat. This hearty rice boasts a 100 gram serving of black rice has 8.5 grams of protein, 3.5 milligrams of iron and 4.9 grams of fiber. High in vitamin E, antioxidants, anti-inflammatory properties makes black rice an excellent choice for improving your diet.
Beef is an excellent source of vitamin B12 and very good source of protein, niacin, vitamin B6, selenium, zinc and phosphorus. It is also a good source of choline, pantothenic acid, iron, potassium and vitamin B2.
I use Certified Angus Beef® Brand roasts for best results.

Beef Black Rice Casserole makes an excellent soup too. Add extra broth to reach desired consistency.

Beef Black Rice Casserole

Ingredients

  • 2 lb chuck roast cut into 1/2-inch pieces (I use Certified Angus Beef® Brand )
  • 32 ounces beef broth
  • 2 cups cooked black rice
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 1 cup chopped onions
  • 1 cup chopped red peppers
  • 2 tablespoons vegetable oil
  • 1 teaspoon granulated garlic
  • 4 sprigs fresh thyme
  • salt and pepper to taste

Instructions

  • Season beef with salt and pepper. Brown meat with oil over medium-high heat. Add celery, onion and carrots. Saute 1 to 2 minutes.
  • Add broth. Bring to a boil, add peppers, thyme, garlic and reduce heat and simmer until beef is tender (about 1 hour)
  • Stir in cooked black rice.
  • Serve with or without broth.

There’s nothing more inviting than a hot, sweet drink after shoveling snow. Also it’s most inviting after breakfast, late at night, midday, midnight, with a cookie or brownie, actually anytime.

It’s also Florida Strawberry season.  My favorite berries. I’m not being sponsored, it’s just my opinion. Fresh, juicy strawberries available now through early March. A perfect time to get your strawberry on!

Strawberry White Hot Chocolate is a nice change from chocolate milk hot or cold. That bit of strawberry flavor puts the sweetness at check.

This drink is made with milk, white chocolate chips, fresh strawberries and a bit of strawberry jam. That’s it.

Ingredients

  • 6 ounces milk
  • 1/4 cup white chocolate chips
  • 1/2 cup fresh strawberries, pureed
  • 1 teaspoon strawberry jam

Instructions

  • Add milk, chips, puree to a small saucepan. heat over low heat, stirring constantly until chips melt and milk is heated. stir in jam.
  • Garnish with whipped cream and fresh strawberry if desired.
