Blueberry Oatmeal Pancakes add a delicate taste of oats and sweetened with honey. Drizzle with buckwheat honey as a bonus treat!

This month’s Improv Cooking Challenge is pairing oatmeal with honey!
What a sweet treat. For my recipe I chose to use 2 kinds of honey. I used traditional honey in the pancake batter. The drizzle is buckwheat honey.
Buckwheat honey has a taste closer to molasses or pancake syrup. It’s darker in color and found in most grocery stores.
I use it instead of syrup. Thanks James for enlightening me about buckwheat honey!

Total Time: 20 minutes

Yield: 6 to 8 servings

Blueberry Oatmeal Pancakes

Ingredients

  • 1/2 cup flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 egg, beaten
  • 1 tablespoon vegetable oil
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1/2 cup blueberries fresh or frozen
  • cooking spray

Instructions

  • Add flour, oats, baking powder and salt in a food processor. Coarsely grind.
  • In a separate bowl, whisk together buttermilk, oil, egg, vanilla and honey. Add to dry ingredients. Stir.
  • Spray griddle with cooking spray. Heat to medium high heat.
  • Drop batter to desired size. Sprinkle with blueberries.
  • Flip once. Serve with syrup or buckwheat honey if desired.

Welcome to another addition of Bread Bakers!
This month, the Bread Bakers are making Good Luck Breads, a theme chosen by Felice from All That’s Left Are The Crumbs.
Good Luck Breads – they could be something that brings good fortune throughout the year (Mardi Gras, New Year, even a housewarming) or shaped as a good luck symbol (pigs, horseshoe, four leaf clover, number etc).
I chose cornbread as my good luck bread. Why cornbread?
Cornbread is considered good luck in parts of the southern United States. Many people eat it as part of their New Yer’s meal for good luck in the coming year.
Its color resembles gold metal. Some people add extra corn kernels, to symbolize golden nuggets.
I love cornbread. I’m more of a fan of the sweet variety. This recipe used sugar and honey. The tang of buttermilk balances it out nicely.

Buttermilk Cornbread

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs, lightly beaten
  • 1/4 cup honey
  • 1/4 cup butter, melted
  • 1/2 teaspoon vanilla

Instructions

  • Preheat oven to 400 degrees. Spray an 8x8-inch baking pan with cooking spray.
  • Whisk together flour, cornmeal, sugar, baking powder, salt.
  • In another bowl, whisk together buttermilk, eggs, honey and vanilla. Slowly add butter.
  • Pour batter into prepared pan. Bake at 400 degrees until inserted toothpick comes out clean. Cool slightly before removing from pan.

Malt is one of those acquired tastes you hear about. I grew up on malted milk balls and dusty road sundaes.
I never know malt was a by-product of brewing beer. Maybe that’s why I prefer beer? 🙂

I like to add 2 teaspoons of malted milk powder, 1 teaspoon chocolate syrup and 1/4 teaspoon vanilla to 6 ounces of milk. Heat and serve.
Don’t forget the marshmallows!

Oatmeal Cookie Latte

Oatmeal Cookie Latte brings the taste of an oatmeal cookie to a warm, smooth latte. Part of Festive Foodies Winter Warm Up Drinks series.

You already know my weakness is cookies. I never met a cookie I didn’t like. True that I do like some better than others. We all play favorites sometimes!
Yes I’m one of those people who can’t eat just one. My guy has the willpower to, not me.
Cookies and coffee are my combo of choice. Any cookie goes with coffee, right?

With that in mind, I thought why not make a coffee drink with the essence of a cookie?

A few drops of vanilla and a pinch cinnamon are a good start. I laced the rim with a buttery oatmeal crumb, just for fun!

Serving Size: 1 cup

Oatmeal Cookie Latte

Ingredients

  • 6 ounces milk
  • 1 shot espresso or 2 ounces brewed coffee
  • 1/4 teaspoon vanilla
  • pinch of cinnamon
  • oatmeal topping
  • 1/4 cup rolled oats
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1 tablespoon corn syrup for rim
  • cinnamon stick (optional)

Instructions

  • Heat butter, sugar and oats in a small pan over low heat. Cook until oats soften, about 2 to 3 minutes. Cool slightly.

  • Prepare heat resistant glass or cup. Dip rim in corn syrup.Roll in oat mixture.
  • Heat milk and coffee to 160 degrees. Stir in vanilla and cinnamon. Pour into prepare cup or glass.
  • Garnish with cinnamon stick if desired.
