I remember as a kid, beef roasts were saved for special occasions. My Mom would talk about getting the perfect-sized roast for Christmas. It had to be big enough for dinner and still leave enough for snacking and sandwiches for the next day’s lunch.
We’d walk to the local grocery and eye the selection. Back then, the choices in cuts were minimal. Mom would get an eye round roast. She’d pick eye round because it was inexpensive and, “Didn’t have fat in it.” Consequently our well-done holiday roast was always a bit dry.
Today we know that those lines of marbling equal flavor. White “flecks of flavor” in the beef ensure consistent flavor and juiciness in every bite. Leaner cuts need special care to bring out it’s full flavor.

I decided on a Sirloin Tip Roast.

I love combining flavors and experimenting with those combos on different proteins. One of my favorite combinations is orange, horseradish and mustard. Sweet, slightly spicy and tangy all in one bite.
It seemed like a great glaze for a roast.

Preheat oven to 450 degrees. Start by seasoning your roast with salt and pepper. Cover completely with glaze.

Next, start the cook timer.

Remember, cooking times and temperatures may vary with method of preparation, size and shape of the Certified Angus Beef ® brand cut, and your desired degree of doneness. Test for doneness using a meat thermometer or instant-read thermometer.

Insert thermometer through side of cut, tip in the center, not touching bone or fat.
Remove from heat when thermometer registers 5-10°F lower than desired doneness.

Lastly, rest your roast. Temperature will continue to rise while resting.

Total Time: 1 hour, 30 minutes

Yield: 6 to 8 servings

Orange Horseradish Crusted Sirloin Roast

Ingredients

  • 1 4-pound Certified Angus Beef ® brand Sirloin Tip Roast or Top Sirloin Roast
  • 3 Tablespoons horseradish, divided
  • 3 Tablespoons spicy brown mustard, divided
  • 6 Tablespoons orange marmalade, divided
  • salt and pepper to taste

Instructions

  • Preheat oven to 450 degrees.
  • Mix together 1 tablespoon horseradish, 1 tablespoon mustard, 2 tablespoons marmalade to make glaze.
  • Season roast with salt and pepper. Evenly coat roast with glaze. Place on rack in roasting pan.
  • Sear uncovered at 450 for 15 minutes.
  • Reduce heat to 325 and roast for approximately 1 hour until roast reaches desired doneness. Check temperature with meat thermometer.
  • Move to cutting board, cover with foil and rest for at least 15 minutes.
  • While roast rests, mix together remaining horseradish, mustard and marmalade. Set aside as dipping sauce.
  • Slice beef against the grain. Serve with reserved sauce.

I got inspiration for today’s cookie from an advertisement for figgy pudding. Figgy pudding is actually a moist plum or fruit cake with English origins.
Figs are a Christmas time treat. I like experimenting with using seasonal favorite fruit in recipes.

Homemade fig jam fills the imprints on these cookies. Sweet, dried figs are reconstituted by boiling in sugar water to form a thick spread.

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 24 cookies

Serving Size: 1 each

Figgy Pudding Thumbprint Cookies

Ingredients

  • 1/4 cup butter
  • 1/4 cup shortening
  • 1/4 cup brown sugar
  • 1 egg separated
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 cup figs, chopped
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup chopped walnuts

Instructions

  • Combine figs, sugar and water in a small saucepan. Bring to a boil and cook until figs are soft and syrup has formed. Whisk into thick jam. Set aside.
  • Lightly beat egg whites, set aside.
  • Cream together butter, shortening and brown sugar. Add yolk and vanilla.
  • Work in flour and salt to form a dough.
  • Divide dough into 24 balls. Dip in egg whites. Roll in nuts if desired.
  • Place on ungreased cookie sheet and bake at 350 for 5 minutes.
  • Remove from oven and gently press your thumb on top to make a small indention. Fill with jam. Return to the oven for an additional 8 to 10 minutes. Cool on sheet a few minutes before transferring to rack to cool.

Something chocolate was in order for today’s cookie recipe. I love all kinds of cookies, but I would be a amiss to no include a chocolaty offering.

Chocolate shortbread is not as sweet like a lot of cookies. These tend to be on the dry side. A good dunking cookie! A hot steaming cup of coffee or hot chocolate and I’m set. Oh yeah, and a dozen of these cookies!

Chocolate Shortbread

Ingredients

    cookies
  • 2 sticks unsalted butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon cloves
  • 1 1/4 cups powdered sugar
  • 1/3 cup cocoa
  • 2 cups flour plus more for dusting
  • icing
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

    cookie
  • Beat butter, egg, vanilla, salt and cloves until creamy.
  • Add sugar and cocoa. Slowly add flour.
  • Turn dough out onto lightly floured board. Roll to 1/4-inch thickness. Cut into shapes.
  • Bake on bare sheet (no spray or liner) in top third of oven at 350 for about 10 minutes than switch pan to bottom third to finish baking, about another 10 minutes.
  • Cool on pan several minutes before moving to rack to finish cooling.

  • Whisk together sugar and one tablespoon of water at a time until it reaches desired consistency.
