Broccoli Slaw
Broccoli Slaw serves shredded broccoli, carrots and red cabbage in a creamy, sweet-tart dressing.
Slaws are easy for summer meals and entertaining. You can serve slaw as a side. Slaw also makes a great burger and sandwich topper.
I love what the deli lingo calls New Your Sloppy. A big blob of crunchy cole slaw on fresh sliced corned beef or turkey. My kind of sandwich. So good!
We often think of cole slaw as made with cabbage as the star vegetable. That isn’t necessarily so.
Cole Slaw gets it’s name from vegetables known as cole crops.
Cole crops refer to plants belonging to the Cruciferae family. Some of these cool weather loving crops include broccoli, Brussels sprout, cabbage, cauliflower, and turnips.
Gardeners can get a spring and autumn crop if the weather is right.
My Broccoli Slaw uses slivered broccoli as the main veggie. I threw in carrots and red cabbage too!

Serving Size: 1/2 cup

Broccoli Slaw

Ingredients

  • 4 cups broccoli slaw mix (broccoli, carrot, red cabbage) (I used Mann's)
  • 2 tablespoon lime juice
  • 2 tablespoon sugar
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • salt to taste

Instructions

  • Whisk together lime juice and sugar. Add mayonnaise and sour cream.
  • Fold in broccoli mix. Allow to chill at least 30 minutes to blend flavors.

Notes

You can substitute fresh slivered broccoli, carrots and red cabbage if desired.

Have you ever tried making breakfast on the grill? It’s easier than you might think. You should give it a try!
I love my little cast iron skillet. A well-seasoned cast iron skillet will cook any style eggs with ease. Just remember that the skillet needs to be hot and use plenty of vegetable oil. Avoid olive oil for this one. A lighter oil will serve the purpose.

Eggs and bacon are great any time. I was in the mood for something bigger. Beefier (Is that a word? It should be!) Think steak and eggs meet waffles in one bite.

These are so good, you want to serve them at breakfast or brunch too!

I start by making the waffles. You can use your favorite recipe or the one I added below. Since I’m using my grill to make this dish, I loosely wrapped the waffles in foil and placed them on the indirect side of the grill without heat.

You can fry your bacon ahead of time or make it just before grilling your burger.

I made my eggs in a cast iron pan on the grill first to avoid a greasy bottom pan. They will keep fine on indirect heat.

Grill your burger according to package directions. It should take about 15 minutes including resting time.

While your burger rests, mix your Sriracha Ketchup.

Assemble by layering a waffle with a burger, cheese, bacon, egg, and spicy ketchup. Top with a second waffle or leave open faced.

 

Drizzle with your favorite syrup if desired. Enjoy!

Breakfast Burger Waffle Sandwich

Ingredients

  • 2 Certified Angus Beef® brand patties
  • 2 eggs, fried
  • 4 strips cooked bacon
  • 2 slices of cheese (American, cheddar, Swiss, etc.)
  • waffles
  • 1 1/3 cup flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • Sriracha Ketchup
  • 1/2 cup ketchup
  • 1 teaspoon lime juice
  • 1/2 teaspoon sriracha or garlic chili sauce

Instructions

    Waffles
  • Whisk together flour, baking powder, sugar and salt. In a separate bowl, whisk together 2 eggs, milk and oil. Fold wet mixture to dry ingredients to form batter.
  • Prepare waffles according to waffle maker recommendations. Wrap loosely in foil to keep warm.
  • Sriracha Ketchup
  • Whisk together ketchup, lime juice and Sriracha. Set aside.
  • Cook Certified Angus Beef® brand patties according to package directions. Rest cooked burgers.
  • While burgers rest, fry eggs. If using cast iron pan, add 2 tablespoons vegetable oil. Be sure pan is hot before adding eggs.
  • Assemble sandwich by layering a waffle, Certified Angus Beef® brand burger, cheese, bacon, egg, spicy ketchup and second waffle. Drizzle with your favorite syrup if desired.

Notes

You can substitute fresh ground beef in burgers. I recommend, Certified Angus Beef® brand.

What’s an ice cream social?

It’s a party while focused on enjoying ice cream! Fun, easy and perfect for any age.

You can set out your favorite flavors of ice cream. The more toppings the better. I like to see chocolate chips, sprinkles, marshmallows, and chopped walnuts, almonds and peanuts.

Plenty of fruit too! Sliced bananas, strawberries, kiwi, blueberries are all good.

Don’t forget the syrups. Caramel, chocolate and strawberry of course.

Seltzer, milk or soda shakes it up a bit!

But the star is always the ice cream. Homemade ice cream is always my first choice.

I like knowing what’s in my food. That goes for ice cream too.  Making ice cream is easy.

Even without an ice cream maker. No churn takes just a few ingredients, sweetened condensed milk, heavy cream and a flavor element.

Blueberry Ginger Ice Cream adds frozen blueberries with fresh and powdered ginger to ice cold sweetened condensed milk and whipped heavy cream. What you get is a smooth, creamy treat to chase summer heat.

Blueberry Ginger Ice Cream Floats

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 1 quart

Blueberry Ginger Ice Cream Floats

Ingredients

  • 1 (12 ounce) bottle ginger beer
  • ice cream
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups heavy cream
  • 1 tablespoon fresh chopped ginger
  • 1/2 teaspoon ginger powder
  • 1 cup frozen blueberries

Instructions

    ice cream
  • warm sweetened condensed milk with fresh ginger to 150 degrees stir occasionally. Allow milk to cool in refrigerator to under 40 degrees. Strain. stir in ginger powder.
  • While milk cools, whip cream into stiff peaks.
  • Fold whipped cream into sweetened condensed milk. Layer 1/2 the mixture into freezer safe container. Add half the frozen blueberries. Gently swirl in. Repeat.
  • Cover surface with waxed paper to prevent ice crystals from forming. Freeze until firm.
  • Make soda by adding ice cream to cold glass and pouring in ginger beer. Top with a additional scoop of ice cream if desired.

Notes

Plus freezing time 6 hours or overnight.

Smoky Roasted Potato Salad

Smoky Roasted Potato Salad delivers roasted potatoes and crisp vegetables in a smoky, creamy dressing. Great side with steak, pork or chicken.

This easy potato salad starts out with baby golden yellow potatoes. I like Idaho® potatoes best. I roast these little gems in olive oil with a generous coating of smoked salt.

Roasting potato pieces with the skins on adds firmness to the salad. No one likes mushy potato salad!

I add finely diced celery, carrots and red onion to my potato salads. I like the bits of colorful crunch.

Smoky Roasted Potato Salads

I usually add eggs in large pieces. For this salad, I smashed hard boiled eggs with a fork. The crumbled egg pieces went directly into the dressing. That gave the mayonnaise and sour cream a bit of texture. It’s still creamy but holds onto the potatoes a bit better.

I think the subtle smokiness from the smoked salt is enough for this dish. Try it out and let me know what you think!

Smoky Roasted Potato Salad

Ingredients

  • 1 1/2 pounds baby yellow potatoes cut in quarters (I use Idaho® potatoes)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked salt
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced carrots
  • 1/4 cup finely diced red onion
  • dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 hard boiled eggs, finely mashed
  • pepper to taste

Instructions

  • Place potato pieces and oil in a resealable plastic bag. Toss to coat with oil.
  • Line a cookie sheet with foil. Lightly spray with cooking spray.
  • Spread potatoes into a single layer. Season with smoked salt and pepper. Roast at 350 degrees, turning potatoes as they brown until crisp. Add vegetables. Chill.
  • Mix together mayonnaise, sour cream and egg. Fold into cold potato mixture. Serve.
