Pumpkin Mac and Cheese

Ingredients
  

  • 1 1/2 cups milk
  • 1 tbsp cornstarch
  • 1 tbsp butter
  • 1 tsp dry mustard
  • 1/2 cup pumpkin puree
  • 4 ounces cheddar shredded I use Cabot
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 cup dry pasta I use shells

Instructions
 

  • Cook macaroni according to package directions. Drain.
  • Whisk together milk, cornstarch, butter, mustard, pumpkin, salt and pepper in a medium saucepan. Bring to a boil over medium-low heat. Boil about 1 minute, reduce heat and simmer, stirring constantly until thickened.Remove from heat and whisk in cheese.
  • Bake at 350 for approximately 30 minutes until thoroughly heated and cheese is melted.
