Tequila Margarita Black Cod

Ingredients

  • 6 ounces Black Cod (I use Sitka Salmon Shares)
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 Tablespoon olive oil
  • 4 each thinly sliced orange slices
  • 2 Tablespoons sugar
  • 1 Tablespoon orange juice, fresh squeezed
  • 2 teaspoons lime juice, fresh squeezed
  • 1 Tablespoon tequila
  • 1 teaspoon orange zest
  • 1 teaspoon lime zest

Instructions

  • Preheat oven to 400 degrees. Place oil in a shallow baking dish. Season fish with salt and pepper. Place fish skin side down in baking dish. Top with orange slices. Bake at 400 degrees for approximately 15 minutes until internal temperature reaches 145 degrees.
  • While fish bakes, prepare sauce. Place sugar, orange juice and lime juice in a 1-quart saucepan. Heat over medium heat, whisking constantly until sugar dissolves and sauce starts to thicken. Add tequila and continue cooking and stirring until sauce thickens, for about 2 minutes.
  • Pour sauce over cooked fish in the dish. Transfer fish to plate. Top with zest and extra sauce if desired.
