Pear Fennel Sunchoke Salad

Ingredients

Mixed greens

D'Anjou Pear, sliced (I used Melissa's)
1/2
cup
fennel, sliced plus fronds for garnish
1/4
cup
sunchokes, sliced (I used Melissa's)
1/4
cup
diced smoked Gouda

tbsp
dried sweetened cranberries
dressing

tbsp
Meyer Lemon juice (I used Melissa's)

tbsp
olive oil

tsp
honey
1/4
tsp
kosher salt
Instructions
Place greens on a plate. Top with pears, fennel, sunchokes, cheese and cranberries.
Whisk together Meyer Lemon juice, oil, honey and salt. Drizzle dressing over salad. Garnish with fennel fronds.
