Cranberry Broccoli Slaw

Servings 2 1/2 cup each

Ingredients
  

  • 1 cup shredded fresh broccoli
  • 1/4 cup shredded onion
  • 1/2 cup chopped fresh cranberries
  • 1 tablespoon chopped fresh parsley
  • dressing
  • 2 tablespoons seasoned rice vinegar
  • 1 teaspoon mirin
  • 3 tablespoons olive oil
  • 1/2 teaspoon Kosher salt

Instructions
 

  • Stir together in a large bowl, broccoli, onion, cranberries and parsley. Set aside.
  • Whisk together rice vinegar, mirin, salt and oil. Pour over slaw. toss to coat.
