If you never tried making mousse at home this recipe is for you. I’m a big fan of chocolate mousse. I love the creamy texture. Summer brings fruit into the picture. Early summer there are strawberries, mulberries and raspberries to pick. Mid summer blueberries make great desserts too. Berry Mousse Mixing berries adds fun flavor profiles to pies, ice cream and delicate desserts like this mousse. You can use fresh or frozen berries or a mix of both in this recipe. Ingredients
  

  • 2 cups heavy cream
  • 1/2 cup powdered sugar (I used Dixie Crystals)
  • 2 teaspoons vanilla
  • 2 cups fresh or frozen mixed berries (I used strawberries, blueberries, blackberries, raspberries mix)
  • 1 teaspoon sugar (I used Dixie Crystals)
  • 1 teaspoon unflavored gelatin

Instructions
 

  • In a cold bowl (the colder the better), whip cream, powdered sugar and vanilla together to form stiff peaks. Refrigerate.
  • Bring berries and teaspoon of sugar to a boil over medium heat. Whisk to dissolve sugar. Cook to soften berries to a pulp. Cool. Run pulp through a sieve to remove seeds if desired.
  • Set an empty bowl over a bowl of hot water. Mix gelatin with the 1 tablespoon of strained pulp juice over the hot water to dissolve. Add to the pulp. Mix.
  • Fold whipped cream into pulp.
  • Top portions with berries if desired.
