Carrot Sponge Cake

Carrot Sponge Cake

Ingredients
  

  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 3 eggs, separated
  • 2 1/4 cups grated carrots

Instructions
 

  • Whisk together flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • Beat egg whites to stiff peaks. Set aside.
  • In a separate bowl, whisk together sugar, egg yolks and oil. Add to dry ingredients. Fold in whipped egg whites.
  • Divide batter evenly into pan compartments. Bake at 325 for about 30 minutes until inserted toothpick comes out clean. Cool pan on wire rack for at least 10 minutes before removing cakes to finish cooling.
