Chicken Meatballs and Spaghetti
What comes to mind when you hear the term, “Budget Friendly Dishes”? Discount produce? Reworked leftovers?
What’s great about budget-friendly meals is that you can do something like cook a large chicken or turkey and make many meals. You can choose tougher cuts of meat, which are usually less expensive and make wonderful soups and stews.
Smart buying when items are in season, bulk buying and making your own sauces are great ways to save.
How about a wholesome pasta meal with a less expensive protein. Chicken Meatballs and spaghetti fit the bill nicely. Fresh tomato sauce rounds out the flavor.

Chicken Meatballs and Spaghetti

  • 1 lb ground chicken
  • ¼ cup minced onion
  • 1 Tablespoon minced garlic
  • 1 Tablespoon Parmesan cheese
  • ½ teaspoon dried celery flakes
  • salt and pepper
  • ¼ to ½ cup breadcrumbs
  • 1 28-ounce can plum tomatoes
  • ½ cup diced celery
  • ½ cup chopped roasted red peppers
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian seasoning
  • salt and pepper
  • 1 pound dried spaghetti
  • cooking spray
  1. Mix together mix together chicken, onion, garlic, celery flakes, cheese, salt, pepper and just enough breadcrumbs to hold it together. Roll into individual balls.
  2. Preheat oven to 350.
  3. Spray cookie sheet with cooking spray. Roll meatballs lightly to coat. Bake for approximately 15 minutes, turning meatballs several times to completely brown and thoroughly cooked.
  1. While meatballs are cooking, Add all sauce ingredients to a saucepan. Bring to a boil and reduce heat to simmer. Cook until vegetables soften about 15 minutes.
  2. Add meatballs to sauce and simmer for about an additional 15 minutes.
  3. While sauce and meatballs cook, prepare spaghetti according to package directions.
  4. Serve.

    Sadly, ground chicken is something that hasn’t made it to the supermarkets in Dubai. I guess low fat isn’t really a thing here yet. But I do love the seasoning you’ve added and the great sauce so I may have to try this with ground pork. It’s strangely lean here so it may not be that far off in calories.
