Sunflower Chip and Dip Plate

“Everybody out of the pool!”

No need to panic. Something is brewing on the horizon. It’s not a thunderstorm. It’s fresh brewed ice tea and snacks!

Homemade potato chips and Bacon Horseradish Dip to be exact.

Don’t worry if you don’t have a tan or new swimsuit. This is a virtual party so come as you are. Just bring your appetite!

I’ll let you in on a little secret. I can’t swim. I took lessons in school but I’m still terrified of water where I can’t stand on the bottom.
I love to wade in streams along the shoreline. I can dunk myself in the pool enough to get wet. So you’ll find me on the sideline or sitting with the kids at the kiddie pool.
Don’t feel sorry for me. I’m always closest to the food and drink. I’ll toss you a towel when you need one!
In the meantime, join me in a snack.

Sunflower Chip and Dip set

I used Russet and Yukon Gold potatoes to make my chips. Cut the chips between 1/16 and 1/8-inch thickness depending on your taste. Fry at 350 until golden brown. Drain on paper towels and season with seasoned salt or kosher salt.
Arrange on a tray by over-lapping potato “petals” to form a sunflower. Place a small bowl of dip in the center to finish off your flower.
I make several kinds of dip and switch out the bowls as needed.

One of our favorite chip and dip combos is Bacon Horseradish. Bits of smoked sun-dried tomatoes round out the flavor. An easy dip to make and a definite crowd pleaser!
I’m also including my French Onion Dip recipe for those die-hard onion dip fans. I add a bit of powdered beef bouillon to the dip to kick it up a notch!

Chip and Dip Sunflowers #SundaySupper

Ingredients

  • 3 large russet and or Yukon Gold potatoes sliced 1/16 to 1/8-inch thickness
  • vegetable oil for frying
  • Bacon Horseradish Dip
  • 3/4 cup sour cream (light or regular)
  • 1/4 cup mayonnaise
  • 1 Tablespoon bacon bits
  • 2 teaspoons horseradish
  • 1/4 teaspoon cider vinegar
  • 1 tablespoon chopped smoked sun-dried tomatoes
  • salt and pepper to taste
  • French Onion Dip
  • 3/4 cup sour cream (light or regular)
  • 1/4 cup mayonnaise
  • 1/4 cup onions, chopped
  • 2 Tablespoons butter
  • 1/4 teaspoon granulated garlic
  • 1/2 teaspoon powdered beef bouillon

Instructions

  • Heat oil to 350 degrees
  • Fry potatoes, drain and season with salt if desired
  • Bacon Horseradish Dip
  • Mix sour cream and mayonnaise together until creamy.
  • Add bacon and horseradish. Stir in sun-dried tomatoes. Season with salt and pepper.
  • French Onion Dip
  • Mix sour cream and mayonnaise together until creamy.
  • Saute onions in butter until soft and golden in color.
  • Add onions, garlic and bouillon. Mix together and serve.
  • Arrange chips as petals on a platter. Place bowl of dip in center to form a flower.
