I chose to crush the grounds a bit more. Easy to do by placing the grounds in a plastic resealable bag and rolling my rolling pin over the bag. This finer texture works well in baked goods but as is works just as well!

Sitting down with a mug of freshly brewed Door County Brownie Batter coffee and one of these brownies was a special treat. Of course I saved a bit of brewed coffee for the frosting, too.

Ingredients
  

  • 1/2 cup butter
  • 3 ounces unsweetened chocolate
  • 2/3 cup flour
  • 1/4 tsp baking soda
  • 1 tsp ground coffee (I used Door County Brownie Batter coffee)
  • 1 cup sugar
  • 2 each eggs
  • 1 tsp vanilla
  • frosting
  • 1 cup powdered sugar
  • 2 tbsp vegetable shortening
  • 2 tbsp brewed coffee, divided (I used Door County Brownie Batter coffee)

Instructions
 

  • Preheat oven to 350 degrees. Melt butter and chocolate together over low heat. set aside to cool.
  • Whisk together flour, baking soda and ground coffee. Set aside.
  • Stir sugar into cooled chocolate. Blend in one egg at a time then vanilla. Fold wet ingredients into flour mixture.
  • Pour into prepared 8x8-inch parchment lined and greased pan. Bake at 350 for about 20 to 25 minutes until an inserted toothpick comes out clean. Cool pan on wire rack before removing brownies.
  • Mix together powdered sugar and shortening. Add coffee one tablespoon at a time to reach desired consistency. Frost cooled brownies.
