My Inspired by Sara Moulton Event recipe is Curried Peas and Black Beans. Sara has dozens of vegetable recipes to choose from and I spied a recipe using fresh green peas. I love fresh peas in a salad as either the star—or co-star in this case—or as a minor player. You can serve this as a hot or cold side dish. Try it both ways and let me know which you prefer!

Curried Peas and Black Beans

  • 1 cup fresh or frozen peas
  • 2 cups cooked black beans, rinsed and drained
  • 2 Tablespoon minced red peppers
  • 1 teaspoon minced garlic
  • 1 teaspoon minced red onion
  • 2 teaspoons lemon juice
  • 1 teaspoon olive oil
  • 1/8 teaspoon cumin
  • 1/8 teaspoon turmeric
  • 1/8 teaspoon paprika


Combine all ingredients in a bowl and stir together. Adjust seasonings to your taste. Marinate in the refrigerator for at least 30 minutes. Serve as a warm or cold side dish.
