Honey Thyme Chicken
What do you think of when you hear the term, “unprocessed foods”?
Andrew Wilder, an unprocessed foods proponent calls it using “The Kitchen Test”. “Unprocessed food is any food that could be made by a person with reasonable skill in a home kitchen with whole-food ingredients.” No refined sugar or flour for example.
I chose to make a simple chicken dish. Instead of frying in oil (which is processed) I quickly brown the chicken over high heat in a little homemade broth then simmer in the honey thyme sauce.

You can serve this Honey Thyme Chicken as an entree or by itself as an appetizer. The reduced sauce lightly coats the chicken.

Ingredients
  • 1 lb chicken breast pieces
  • 1 cup homemade chicken broth divided
  • 2 tablespoons raw honey
  • 1 teaspoon dried thyme
  • sea salt to taste
Instructions
  1. Place ¾ cup broth, honey and thyme in a small saucepan. Simmer over medium heat, whisking constantly until reduced by about ½.
  2. Brown chicken in ¼ cup broth over high heat for 1 to 2 minutes.
  3. Pour sauce over chicken and simmer until chicken reaches 160 degrees.
