Italian Tuna and Shells Salad
Welcome to our #SundaySupper Tailgate Party!
I must confess I’m not the biggest football fan but I love the food! I’m always up for the traditional fare, yet a little variety can’t hurt either, right?
So I’m bringing a cold Italian Tuna and Shells Salad with some sliced veggies on the side. Use your favorite Italian dressing for this salad and leave the mayo in the fridge!

Italian Tuna and Shells Salad

Ingredients

  • 1 12 ounce can of tuna in water, drained (use your favorite, white, chunk light, etc.)
  • 2 cups uncooked pasta shells (I use the mini shells)
  • 1/4 cup chopped roasted red peppers
  • 2 Tablespoons fresh chopped parsley
  • 1/2 cup Italian Dressing
  • 1 packet dry Italian dressing mix
  • 1 cup Parmesan cheese (optional)

Directions
Cook pasta according to package directions. Drain.
In a medium-sized bowl, flake tuna and sprinkle with dry salad dressing mix. Stir in peppers and parsley. Add pasta.
Add enough of the dressing to coat mixture. Stir and refrigerate for 30 minutes to blend flavors. Pasta tends to absorb a lot of dressing so have extra on hand to add if more dressing if needed.
Serve alone or as a topper for a tossed salad. Sprinkle with parm cheese if desired.
