I’m a fan of lemon curd in lemon meringue pie and pastry. So when I received these key limes from Melissa’s Produce, I had to try a lime take on curd!

Adding a hint of lavender from Taylor and Colledge rounds out the tartness.
I’ve used bottled key lime juice in Key Lime Pie, but fresh squeezed key limes are so fresh and easy to incorporated into popular dishes. Use a sprinkle of key lime to brighten any dish.

Key Lime Lavender Curd

Servings 1 cups

Ingredients
  

  • 1/2 cup fresh squeezed key lime juice
  • 10 tablespoons sugar (I used Dixie Crystals)
  • 1/2 teaspoon lavender extract (I use Taylor and Colledge)
  • 1 egg
  • 1 egg yolk
  • 5 tablespoons unsalted butter

Instructions
 

  • In a 2-quart saucepan, whisk together key lime juice, sugar and lavender. Whisk in egg and egg yolk.
  • Cook over medium-low heat, for about 1 minute, scraping down the sides often.
  • Remove from heat and stir in butter. Return to stove and cook over low heat for about 2 minutes, removing periodically and stir as it begins to thicken and bubbles start to form.
  • Pour finished curd into a bowl and cover with plastic wrap, pressing it against the curd so water doesn't form on top. Chill at least one hour before use.
