Everybody sing… ♪ On Top of Spaghetti. All covered in cheese. I lost my poor meatball. When somebody sneezed. ♪ ♪ Okay, I get it you’re hungry. Its time for some spaghetti and meatballs. Two kinds of meatballs to be exact. I promise I won’t serve you any that rolled off the table and onto the floor.

Meatball Duet

(served with whole grain spaghetti) I entered a meatball contest benefiting Pediatric Cancer research a few years back. The winner won by a landslide with her traditional meatballs. Her secret? She said to be careful not to overwork the meat. Its best not to tightly roll the meatballs. Try it. Let me know what you think. Ingredients

    Beef meatballs

  • 1/2 lb lean ground beef
  • 1/4 cup bread crumbs
  • 1 egg, lightly beaten
  • 2 T parmesan cheese
  • 1 tsp grated garlic
  • 1 tsp Italian seasoning
  • S&P to taste

Chicken Meatballs

  • 1/2 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/2 tsp Worchestershire Sauce
  • 1 T chopped basil
  • 2 T parmesan cheese
  • 1 tsp minced garlic
  • S&P to taste
  • olive oil for frying

Directions Mix beef and chicken meatball ingredients in separate bowls. Lightly roll into balls and brown in a large skillet.

2 meatballs

Finish off cooking meatballs in the oven at 350 for about 10 minutes. Add meatballs to your favorite sauce. Simmer.
