sweet potato bread

Enjoy a different kind of potato bread this season! Sweet Potato Bread may just become your new favorite!

Sweet Potato Bread

Yield: 12 slices

Serving Size: 1 slice

Ingredients

  • 1 medium cooked sweet potato, mashed (about 1 cup when mashed)
  • 1/4 cup warm water 110 to 120 degrees
  • 1/2 cup warm milk 110 to 120 degrees
  • 1 tablespoon butter
  • 1 packet dry yeast (I used Red Star)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 1/4 to 3 1/2 cups flour

Instructions

  • Mix together flour, sugar, salt, yeast and 1 3/4 cups flour.
  • Bring water, milk and butter to a temperature of 110 to 120 (Red Star yeast users 120 to 130) add to sweet potato and blend.
  • Stir wet mixture into dry mixture. Add 1 1/2 cups flour.
  • Turn out onto lightly floured board. Knead into a smooth ball (6 to 8 minutes.)
  • Place dough ball into a large, lightly greased bowl. Cover and set in a warm place to double in size.
  • Punch down risen dough and shape in loaf. Place in greased 5x9 loaf pan, cover and let rise again.
  • Bake at 375 for approximately 30 to 40 minutes until golden brown.
  • Remove baked bread from pan and allow to completely cool on a rack before slicing.

Beef Pistachio Pesto Crostini

Steak Pistachio Pesto Crostini with grated smoked gouda and bronzed tomatoes. Ready in under 30 minutes. Great for beef lovers of all ages!
I’ve been seeing all the delicious beef appetizers lately posted on the web and needed to join in the fun!
The holidays will soon be here.
That means I need some stress free recipes that look like I fussed all day! I’m kidding of course, but easy appetizers my guests will love will always top the list.
Steak Pistachio Pesto Crostini fits the bill! It makes a great small plates addition to and party or family meal.
I pan fry the steak. Grilled is delicious too!
I used Certified Angus Beef ® brand strip steak for this recipe. I find it cooks up tender every time!

Steak Pistachio Pesto Crostini

Steak Pistachio Pesto Crostini

Yield: 8 to 10 servings

Serving Size: 1 each

Ingredients

  • 1 10 to 12 ounce strip steak
  • 1 tablespoon olive oil
  • 1 medium tomato, sliced thin
  • 1 baguette sliced into 8 to 10 pieces 1/2-inch thickness
  • 1/4 cup melted butter
  • 1/2 cup shaved smoked gouda
  • pesto
  • 1/4 cup salted pistachios
  • 1/2 cup fresh basil
  • 2 cloves garlic
  • 1/4 cup grated parmesan cheese
  • 1/4 cup olive oil

Instructions

  • Heat pan over medium high heat with olive oil. Season steak with salt and pepper. Cook steak 6 minutes per side for medium rare. Temperature 125 rare 130 medium rare. Rest on rack.
  • In same pan, sear tomatoes for about 30 seconds per side. Remove from heat. cover with grated cheese.
  • pesto
  • Add pistachios, garlic, basil and cheese in a food processor. Grind into paste. Slowly add olive oil and process into pesto. Add more oil if needed to reach desired consistency.
  • Brush both sides of bread with butter. Broil to golden brown.
  • Spread browned bread with pesto. Top with thinly sliced steak and tomato sliced with cheese.

Chestnut Stuffing #SundaySupper

Chestnut Stuffing

Chestnut Stuffing goes great with turkey or beef. Chunks of chestnuts, wine and cream make this stuffing over the top!

Welcome to another fun addition of Sunday Supper!

This week it’s all about the side dishes. Without these tasty tidbits that Thanksgiving or holiday dinner is just another turkey.
We’re big on stuffing at my house. I make some version of stuffing all year round. Crusty white bread, cornbread or my favorite, potato bread breaks up the pasta and rice rotation rut.
Chestnuts give this stuffing a holiday flair. Boiled, chestnuts take on a soft, sweet flavor. Easy peasy to cook too!
I cut an “X” on the flattest side before boiling. Cover chestnuts with water and bring to a boil. Cook chestnuts about 15 minutes until soft. Cool and peel.
Chestnuts add a bit of texture, Vitamin C, folates, B vitamins and are gluten-free. These nuts are also a good source of fiber and monounsaturated fats.
So dig in and enjoy a big spoonful. After all it is the Holidays!

Chestnut Stuffing

Prep Time: 30 minutes

Cook Time: 30 minutes

Yield: 8 servings

Ingredients

  • 8 cups soft bread cubes (I use potato bread)
  • 3/4 cup butter
  • 1/2 cup chopped celery
  • 1/2 cup chopped onions
  • 1/4 cup chopped fresh parsley
  • 1/4 cup white wine
  • 1/2 cup chicken broth or vegetable broth
  • 1/4 cup half and half
  • 1/2 cup chestnuts, boiled and chopped

Instructions

  • Saute onion and celery in butter until softened. Add parsley.
  • Add broth, half and half and wine. Add chestnuts.
  • Stir in bread and mix.
  • Pour into 8x8-inch buttered baking dish. Bake uncovered at 350 for 350 minutes.
