Hot, crispy Tuna Salad Grinders make a quick meal for busy families. Kids love the tuna. Moms love the “no clean up.”

This week Sunday Supper says bring the kids into the kitchen! We’re focusing on kids and the kid in us as we share stories and kid related favorite recipes with you.
Do you cook with your kids or grandkids?
When my daughter was young, cooking was THE LAST thing that interested her. She didn’t even like making herself sandwiches!
She worshipped the can opener. A cold can of Spaghetti O’s was all that hungry teenager wanted. She would eat that pasta cold right out of the can. I kid you not. (Sorry, I couldn’t resist the pun.)
That didn’t stop me from trying to teach her old school how to make dough, soups and cakes.
She reluctantly learned how to cook. She turned out to be a fantastic cook. Her husband is no slouch in the kitchen either. He even makes award winning sushi. 😉
That is not the end of the story.
I was blessed with a granddaughter that couldn’t get enough of getting her hands in the dough. Baking cookies and even cheesecakes are a snap for her.
When she was little, I took her to the adult daycare center where I volunteered.

She loved to help out in the kitchen. Here she’s making a “Dirt Cake” with gummy worms too!

One of her favorite lunches then and still is would be tuna salad. Stuff a roll with Gram’s tuna salad, black olives, spinach and tomatoes. Put it under the broiler for a few minutes and get the roll all crispy and crunchy.
My lovely baby girl was happy as could be! A few oven fries didn’t hurt either!

Try it broiled or not and you are in for a treat. Salty olives and capers with moist, lemony tuna and spinach make a delightful sandwich.

Tuna Salad Grinders

Tuna Salad Grinders

Ingredients

  • 1 5-ounce can tuna, drained
  • 1 tablespoon celery, diced
  • 1 teaspoon shallot or red onion , minced
  • 1/2 teaspoon capers, minced
  • 1/2 teaspoon lemon juice
  • 1 tablespoon mayonnaise
  • salt and pepper to taste
  • 1/2 cup baby spinach
  • 1/4 cup sliced ripe olives
  • 1/2 tomato, sliced
  • 1 hoagie or steak roll

Instructions

  • Mix together tuna, celery, shallots, capers, lemon juice, mayonnaise, salt and pepper.
  • Slice roll 3/4 way through. Layer spinach, tomato, tuns salad and top with olives.
  • Broil on high for 1 or 2 minutes until bread is crisp and top of sandwich is browned.
  • Serve.

Nourishing Noodles Recipes Review and #giveaway

Breakout the spiralizer it’s Zoodle season! Nourishing Noodles Cookbook by Christiana Anca shows veggie noodles don’t need to be boring!

I’m always trying to incorporate more vegetables in our diet. I love my spiralizer but I  was lacking in ideas for meals beyond zucchini noodles.
Beginners to pros will find over 75 step by step plant-based recipes to turn vegetables into the stars of the show. These handy threads of veggie goodness will have you skip the pasta in favor of lighter, nourishing veggie noodles.

From appetizers to desserts, this cookbook has something for everyone.

You don’t need to put your spiralizer away when zucchini season starts to fade away. You will find recipes for cool season fruits like apples and pears along with winter favorites like sweet potatoes and butternut squash.

Noodle Pizza

NOODLE PIZZA Serves 2
CRUST
1 15.5-oz (439 g) can organic cooked chickpeas, drained 

1/2 cup (120 ml) water

1 tsp cumin powder

1/2 tsp paprika

1 pinch sea salt flakes 

1/4 medium zucchini, diced

1⁄3 cup (56 g) hemp hearts

SAUCE
1/2 large red bell pepper (capsicum), roughly chopped

NOODLES
1/2 medium zucchini, ribbon spirals (spiralize on the flat blade)1/2 medium sweet potato, thick spirals

TOPPINGS
1 small baby eggplant, thinly sliced 

1 medium button mushroom, thinly sliced

Garlic and Chives Cream Cheese (page 150), to taste1 tsp onion flakes

Basil leaves, to taste

Fermented Hot Chili Sauce (page 138), to taste

Preheat oven to 375°F (190°C).

Except for the hemp hearts, place all crust ingredients in a food processor and blend until smooth but still slightly chunky.

Transfer crust mixture to a medium bowl and fold in the hemp hearts.

Spread the crust onto a large baking pan lined with parchment paper, about ½ inch (1.5 cm)thick.

Bake crust for 20–25 minutes, checking it after 10–15 minutes to make sure it isn’t burning.

While baking the crust, place the red pepper in a blender and puree. Set aside.

Remove the crust from the oven and allow to cool in the pan for at least 10–15 minutes or until completely cooled.

Spread half of the red pepper sauce onto the pizza crust, then distribute the zucchini ribbons,sweet potato noodles, eggplant, and mushrooms. Add the remaining red pepper sauce and top with dollops of cream cheese and the onion flakes.

Place the pizza back in the oven and bake for an additional 15 minutes, or until the toppings are tender but still crunchy.10 Top with fresh basil and chili sauce, and serve.

PEAR NOODLES WITH CHOCOLATE SAUCE

PEAR NOODLES WITH CHOCOLATE SAUCE Serves 2

CHOCOLATE SAUCE
1 1/2 cups (225 g)cashews

1 cup (235 ml) water

3 tbsp raw honey or maple syrup

5 tbsp cacao powder

Seeds of 1 vanilla bean

1 tsp ground cinnamon

1 pinch cayenne pepper

1 pinch sea salt flakes

NOODLES
2 medium, firm, seasonal pears

TOPPINGS
2 tbsp Buckinis (page 140) or crushed almonds, divided 2 tsp cacao nibs, divided 1 tsp chia seeds, divided 1 small handful fresh raspberries

Add the chocolate sauce ingredients to a blender and process until smooth and creamy.Transfer sauce to a medium bowl and set aside.

Slice off tops of pears and set aside.

Spiralize pears on the thin blade, leaving about ¾-inch (2 cm) ends (bottoms).

Place the pear bottoms on a plate and spoon 1 tablespoon chocolate sauce onto each one.Sprinkle half of the buckinis or crushed almonds, cacao nibs, and chia seeds between the two,then carefully arrange the pear noodles on top.

Spoon another tablespoon of chocolate sauce on top of the pear noodles, sprinkle the remaining buckinis or crushed almonds, cacao nibs, and chia seeds between the two, and add the fresh raspberries.

Place the pear tops on top and serve immediately.

Chicken Cordon Bleu Burgers #SundaySupper

This week Sunday Supper salutes classic cookout treats. Burgers and hot dogs pop up at cookouts more than any other food and for good reason. Hot dogs and burgers have come a long way since I started buying ground meat and packaged franks.
As a young mom hot dogs and burgers were quite often on the dinner menu. Quick cooking and inexpensive protein was a priority.

Nowadays burgers tout less fat and include a variety of meats. Chicken, turkey, mushrooms and even black beans vie for spots along with beef on your grill. As far as I’m concerned I okay with trying any kind of burger! That would be with or without the bun. 😉
I still enjoy an occasional hot dog with kraut at a cookout, ball game or festival. I’m much more about the burgers!

I like the idea of stuffing burgers with juicy treats like meat and cheese.

When you bite into this Chicken Cordon Bleu Burger you will agree stuffed burgers rock!

Chicken Cordon Bleu Burger

Chicken Cordon Bleu Burgers #SundaySupper

Yield: 4 burgers

Serving Size: 1 each

Ingredients

  • 1 pound ground chicken
  • 1/2 cup diced turkey ham or ham
  • 1/2 cup diced Swiss cheese
  • 1/2 cup fine bread crumbs
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • dijonnaise
  • 1/4 cup dijon mustard
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar

Instructions

  • Mix together chicken, Italian seasoning, salt and pepper. Divide chicken into 4 parts.
  • Flatten each burger and place diced ham and cheese in the center.
  • Bring sides up to cover meat and cheese. Coat with bread crumbs and grill or pan fry.

  • Mix together mayo, mustard and vinegar. Spread on finished burgers if desired.
